I've found that pausing and commenting works well if you are answering all of the questions and really trying to accelerate your training/learning. You can also comment while it plays or after it finishes.
DO NOT WATCH A VIDEO AND NOT MAKE A COMMENT. Even if it is one sentence only, COMMENT!
Here are a couple questions/concepts to be sure to comment on:
1) Any questions you have regarding this portion of training
2) What does Dave get on the board during this section?
3) What is a primary objective/purpose of this part of Day 2?
4) How do you want trainees to view the different sets and options that customers have? Now, how does Dave create that here? Or not?
I like how dave elaborates on doing something for the customer instead of to the customer to the training class. The story about the North Pacific DVM really got the point across.

pay attention to how dave asks questions to get trainies excited - what's 10% of a galley? so be excited to drop down
pay attention to the way dave gets trainees to understand the sets "how do you know which pieces come in a galley?", "how do you know if the set comes with a sharpener?"
